What fixings suit a roof this exposed?

Copper or stainless steel rather than plain steel nails, which rust. Slates are hooked or fixed with copper, lead of a proper thickness is clipped down, and ridges are dry-fixed rather than left on mortar alone.

Why does only one side of my chimney leak?

Because the sea side takes the weather. Wind-driven rain wears out the mortar and works under the flashing on that face first.
